COCKTAILS

The Dawn Club is first and foremost a bar, for gathering and drinking. So, our central focus is on the provision of an outstanding beverage experience. The Classic and Modern Classic cocktail styles at the Dawn Club are inspired by the Jazz Era of post-prohibition, produced under the guidance of Jayson Wilde, Beverage Director,  and Engracio Clemena, General Manager. The Low-Proof and Zero-Proof cocktails will surprise, delight and satisfy. We could go to great lengths explaining each of these cocktails and their unusual ingredients, but there’s only one way to truly learn about them, and that’s to stop by and enjoy them.

WHISKEY & SPIRITS

Sharing the limelight with the cocktails is the Whiskey Collection. Over the past 15 years, when the most sought-after of whiskies made their way via “allocation” to our Future Bars Group and to our Cask Stores, those were set securely aside for a grand future occasion. That occasion has arrived in the form of the Dawn Club. We are able to offer whiskies which have long since gone out of production and out of reach. It is a significant collection of the rarest whiskies. Whiskey folks will be spoiled for choice.  

When visiting the Dawn Club and exploring the extensive whiskey and spirits collection, making a single choice can be nerve-racking. Since we are in the world of hospitality and your satisfaction is our responsibility, we have prepared a whiskey and spirits flight program where you can select four versions of the spirit at a time. Flights offered are in the varieties of Bourbon, Rye, Irish, Japanese, Smoke-Free Scotch, Peated Scotch, Brandy, Cane, Gin, Tequila and Mezcal. The flights are served on a custom tasting tray which comes with a beer to cleanse the palate, a hand cut cube of perfect ice and a water dropper.

WINE

The wine program at the Dawn Club has been thoughtfully selected. Either by the glass or by the bottle, there are excellent choices of white, red and rosé varietals. Champagne and sparkling wines from Napa are a sure to satisfy those in a mood for the fine bubbles.

BEER

For the few prefer beer on occasion, we offer three on tap. The current rotation serves a Kölsh from Brauerei Heinrich Reissdorf in Köln, Germany. There’s an IPA from our friends at Oakland’s Original Pattern Brewing. The Champagne Velvet Pilsner comes a fair distance, but travels well, from Upland Brewing in the Mid-West. The brewers at the Athletic Brewing Company have not yet admitted that they make their award winning alcohol free Upside Dawn Golden Ale just for the Dawn Club.
